    福州名產~~燕皮

     

    燕皮是福州特有的風味小吃,是饋贈親友的佳品。福州肉燕皮創於清末光緒年間。成品燕皮色白質香,平滑細潤,脆嫩爽口,可切成絲狀煮食。
    用精選豬後腿瘦肉,剔去肉筋和骨膜,切成細條,用木棰搗成肉泥,徐徐加入用篩過的薯粉和適量清水,反覆攪拌,不斷壓勻,初成硬坯,然後放在條板上,軋輾成薄片。敷上一薄層薯粉,折疊起來,略干為鮮燕皮。繼續晾乾為干燕皮,一般包裝久貯一年不壞。
    肉燕支配以其它原料,可做太平燕等風味名菜。太平燕因其別具風味和萊名中蘊含的太平吉利之意而倍受福州人青睞。福州人逢年過節、婚喪喜慶、親友聚別,太平燕都是席上不可缺的一道大菜。在喜慶宴會上,每當「太平燕」上席時,鞭炮齊鳴,客人們停筷停杯,恭候新郎、新娘或壽公、壽婆前來向賓客敬酒,使喜宴氣氛達到高潮。

    據吃過的人說: 吃起來相似,但內容不盡相同。
    就像扁食那樣尋常的小吃隨處可見。
